They're drawn from recognized coffee and restaurant industry sources — including the Specialty Coffee Association (SCA), National Coffee Association (NCA), IBISWorld, the National Restaurant Association (NRA), and Square coffee data — then adjusted to your shop's specific profile: your city tier, shop maturity, staff size, and seating type.
